Ingredients for Bhapa Doi / Steamed Yogurt:

1. Natural yogurt (সাধারণ দই): 500 grams
2. Condensed milk (কংডেন্স্ড দুধ): 500 grams
3. Cardamom (crushed): 3-4 pcs

Method for Bhapa Doi:

1. Take 500 grams of natural yogurt and wrap it in a fine cloth and hanging it for 2-3 hours to drain the water. By this, the original amount will get reduced to 200 grams of yogurt.

2. Put the reduced yogurt in a large bowl. Add the condensed milk to it and whip until it turns into a smooth paste. Make sure there are no lumps in the paste.

** various flavoured Bhapa Doi may be made simply by adding the required ingredients. For example: Mango Bhapa Doi may be made by adding mango pulp to the mixture.

3. Add the crushed cardamom and mix it well once more.

4. Place the curd mix inside a container with a lid.

5. Steam the mixer for 15-20 minutes.

** Pressure cooker can be used as a steamer without the pressure vent device. Fill the cooker with some water, placed the container inside it, letting the water cover half of it.

6. Now take the curd mix off heat. Let it cool naturally in the room temperature.

7. While serving, cut it into pieces as shown in the picture.
Bhapa Doi or Steamed Yogurt is a Bengali dessert and it is the simplest of sweet dishes.
