Dimer Dhokkar Dalna  (ডিমের ধোকার ডালনা)

Ingredients for Dalna:

Potato(boiled):500 gms
Chillies (chopped):5-6 pcs
Eggs:10 pcs
Ginger: 2 tsp
Black pepper powder: to taste
Cumin powder: 2tsp
Turmeric powder: 2tsp
Coriander powder: 2tsp
Red chilli powder: 2tsp
Salt : to taste
Garam masala powder (গরম মসলা): 3tsp
Refined Oil: 2tsp

Ingredients for the gravy:

Onion paste:             ½ cup
Curd (দই):                              ½ cup
Chicken Stock:            5 litters
Ginger paste:               2tsp
Tomato puree:              ½ cup
Garlic paste :                2tsp
Panch phoran:             1tsp
Mustard oil:                  To fry
Cumin powder:             1tsp
Sugar:                            1 tsp
Coriander powder:       1tsp
Red chilli powder:         2tsp
Turmeric powder:          1 ½ tsp
Gram Masala powder:    2 tsp
Salt:                                  to taste
Green coriander(chopped): to garnish

Method for Dalna:

Take a large bowl and beat the eggs. Now add boiled mashed potatoes into it. Mix it well. Add coriander powder, chilli powder, turmeric powder, cumin powder, black pepper powder, garam masala and salt into it. Add ginger paste and chopped chillies. Mix the mixture well and pour it in a greased baking tray and bake it for 25 minutes.

Once it cools down cut it into cubes and deep fry it.

Method for the Gravy:

In a kadhai put some oil into it. Now add panch phoran, onion paste and ginger garlic paste. Cook it for few minutes. Add all the powder spices (mentioned above), sugar, salt and tomato puree and cook it for 2 minutes. Once it is done, add chicken stock. Cook it till the stock remains half. Add fried cubes into it. Cover it with a lid and cook it for 5 minutes. Garnish it with chopped coriander leaves.

Serve hot with Rice or Chapatis.
