Macher Kochuri মাছের কচুরি

Ghee : 3 tsp
Flour : 3 cups
Salt : to taste
Oil : as per requirements
For Filling
Fish (ভেত্কি / সুরমাই) : 600 grams
Garlic : 6 cloves
Ginger : 1 pcs
Mustard Oil : 2 tsp
Sugar : 1/2 tsp
Turmeric powder :1 tsp
Red Chili powder :1 tsp
Panch Poran (পাঁচ ফরণ) :1 ½ tsp
Salt :to taste

Take a deep bowl. Add flour, ghee and salt and make soft dough with water. Keep it aside for few minutes.

Make a paste of ginger and garlic in a grinder. With the help of little water and turmeric powder steam the fishes (ভেত্কি / সুরমাই). Once it is cooked properly, separate bones from the flesh. In a kadhai heat up the mustard oil, add panch phoran (পাঁচ ফরণ), ginger-garlic paste and red chilli powder, then fry it properly. Once it is done, add mashed fish flesh, sugar and salt. Fry it till the mixture becomes dry properly to stuff into the dough made earlier.

Make medium size balls out of the dough made earlier. Fill one tsp of the mixture in the center of each dough and make puries out of it. Heat the oil in a deep kadhai and deep fry the kachuries (কচুরি). Serve hot with mustard sauce.
