Ingredients
1 Medium sized mocha (মোচা) or Banana Blossom
Cooking Oil (Preferably mustard oil/সর্ষে তেল) to grease fingers
½ Cup grinded coconut
1 tsp Cumin or jeera powder
2 tsp Coriander or dhania powder
1 tsp garam masala Powder
1 tsp Turmeric Powder
1 tsp Red Chilli Powder
1 tsp Sugar
1 tsp cooking oil (Preferably mustard oil/সর্ষে তেল)
1 tsp wheat flour (আটা) mixed in ¼ cup water
1 tsp desi ghee
2 whole Red Chillies
1 Bay leaf (তেজ পাতা)
½ Teaspoon whole Cumin Seeds
Salt to taste
Method to prepare the banana blossom (মোচা):

Making Mocha Ghonto (মোচা ঘন্ট) requires lot of patience and one must know the art of separating the blossoms (মোচা). Follow the steps as given below-
Apply little cooking oil (preferably mustard oil/সর্ষে তেল) in the finger and palm to avoid the dark stains which stay for long periods.
Separate each blossoms and soak in water for 15 minutes.
Wash it properly and chop into small pieces and keep in water for another 5 minutes
Now boil the chopped blossoms (মোচা) for 15 minutes in plain water.
Drain the water and now the banana blossom (মোচা) is cooked and ready for further cooking

Method:
In a pan (kadai) heat oil (Preferably mustard oil/সর্ষে তেল) and add the grinded coconut and cook it for 4 to 5 minutes
Add the cooked banana blossom (মোচা)
After cooking it for 10 minutes, add turmeric, cumin, coriander, garam masala and red chilli powder as per the quantities mentioned above.
Add sugar as per taste.
Cook it for 5 to 7 minutes
Add little water if required, cook till the oil starts separating
Add the wheat flour paste to it and mix well.
Put the oven off and cover it for 2 minutes.
In a small pan heat the ghee, add the whole Red Chilli, bay leaf (তেজ পাতা) and the Cumin Seeds
When it starts splattering, add the cooked banana blossom and mix well.

Transfer to a serving platter and garnish with sliced green chilli and serve with rice
