Rajasthani Laal Gosht (রাজস্থানী লাল মাংসো)

Mutton: 1 kilogram
Yogurt: 50 grams
Whole Red Chilly: 5/6 Pcs
Bay leaves: 2/3 Pcs
Cinnamon: ¾ Sticks
Cardamom: ¾ Sticks
Cumin and coriander seeds: ½ teaspoon each
Red chilli powder: 2 tea spoon
Kashmiri red chilli powder: 3 teaspoon
Ginger and garlic paste: 2:2 teaspoon each
Chopped onion: 100 Grams
Sugar and salt: as per your taste
Mustard oil: 200 Grams
Garam masala powder: 1 teaspoon
How to prepare:
Marinate the mutton with yogurt and chilly powders for 1 hour.
Put Kardhai on a oven and add mustard oil into it. Heat the oil and add cumin & coriander seeds, crushed cinnamon & cardamom, bay leaves and whole red chilly one after another. Put ginger garlic paste and sauté for 2 to 3 minutes. Then add chopped onions and sauté till it turns golden brown. Now add that marinated mutton and stir. Add sugar and salt as per your taste. Cover the Kardhai with a lid and put the gas in a low flame. Stir it after 3 to 4 minutes. When the mutton is ready add some garam masala powder. Serve hot with rice or Roti.
